1924 BLEU made by H. Mons (Auvergne, France) This cow and sheep’s milk blue is decadent and delicious. It begins with a salty bite but quickly smooths out with light grass and herbal notes and a pleasant mushroomy finish. Its rich pate and generous blue-green veining is balanced enough for a  cheese novice but rich and sophisticated enough for any cheese connoisseur. Pair with a bold Pinot Noir to compliment the creaminess.
