BLEU DU BOCAGE Pascal Beillevaire Selection (Vendée, France) – A relatively new cheese resulting from the introduction of goats into this traditional butter-making region of western France. It’s made with pasteurized goat’s milk and aged for only 3-4 months. It’s a unique recipe that results in a finely balanced blue cheese, not too salty but with a meaty slightly sweet flavor that is vegetal in the finish.
