SIMPLY SHEEP made by Nettle Meadow Farm and Cheese Co. (Warrensburg, NY) – Semi-soft to soft cheese made from pasteurized sheep’s milk. It is semi-aged with a white rind. It ranges in flavor from smooth when young to robust when fully mature. Cultured differently from many of our other bloomy rinds, it hints of buttery smooth undertones in its youth and grows more robust in flavor as it ages.
