TOMME DOLCE made by Andante Dairy (Petaluma, CA) – Artisan cheesemaker Soyoung Scanlan brings a background in science and classical music to her craft. “This is a firm cheese made with pasteurized goat’s milk and washed with a local artisan brandy and plum jam from her friend June Taylor. The style is similar to the Pyrenees classic Tomme Jurancon. It is firm, with an even, closed texture and notes of honey, cinnamon, and a hint of anise.
