TROIS LAITS Pascal Beillevaire Selection (Ariège, France) – Cheesemaker Sylvie Domenc crafts this gentle washed rind cheese with a combination of raw cow, pasteurized goat, and pasteurized sheep milk, hence its name.  The integration of the three milks creates a unique balanced flavor that is at moments fruity, others buttery, others yeasty. Trois Laits is both nuanced and crowd pleasing; pair with roasted almonds or melt into a gratin.
