TUMBLEWEED made by 5 Spoke Creamery (Port Chester, NY) – A cross between a Cantal Fermier (Le Salers) and an aged Cheddar, this semi-hard cheese shows its true form after 12 months in the cave.  A raw farmstead cow’s milk, The flavor is fruit with a brothy, brown butter aroma. Tumbleweed pairs beautifully with a bold Tempranillo. We also like to serve it with figs – fresh when available – or honey with a touch of balsamic vinegar.
