VEIGADARTE made by Joaquín Villanueva Casado (Ambasmestas, León, Spain) – Semi-soft cheese made from pasteurized goat’s milk. A sumptuous cheese encased in a thin layer of oak ash under its white bloomy rind. Often a slice of Veigadarte will be a creamy beige color near the edge and a pure-white color in the middle. It has a very smooth texture due to the high butterfat content of the Verata and Avila goats milk; the flavor is slightly earthy with a pronounced goaty tang. Pairs well with Albarino, Vinho Verde or Cava.
