VENDEEN BICHONNE Pascal Beillevaire Selection (Pays de la Loire, France) Vendeen Bichonne is made in the south of Vendee, in West France. It is an artisan pasteurized cow’s milk cheese. At the Beillevaire Dairy, they built a cellar, with natural stones underneath the premises where the temperature and humidity are controlled. They continue affinage for and extra 60 days to help develop the aromas and complexity of the cheese. The rind is grey with a speckling of brown shades. The ivory colored paste pate is buttery and slightly earthy with a long finish.
